ingredients
- 1 tablespoon olive oil
- 1 onion, sliced
- 1⁄2 roasted garlic
- 1⁄4 cup chopped fennel (optional)
- 4 -5 cups kale, chopped
- 1 lemon, juice of
- 1 teaspoon salt (more if needed)
- 1 pinch black pepper (more if needed)
- 1⁄3 cup cheese (shaved three blend cheese, toscano, cheddar, Parmesan)
- 16 ounces orechiette pasta (1 bag)
directions
- Cook pasta as directed, rinse and set a side.
- Saute onions, garlic and fennel for about 3 minutes.
- Add Kale and lemon juice then cook for about 2 minutes.
- Add pasta, salt and pepper. Top with cheese and serve.
- Optional: add tomatoes and/or grilled chicken.
