Fantastic Strawberry Pie

ingredients
- 3 quarts fresh strawberries, halved, divided
- 1 3⁄4 cups sugar
- 5 tablespoons cornstarch
- 3⁄4 cup water
- 10 inches pie shells, baked and cooled
directions
- Mash enough berries to make 2-1/2 cups.
- In pan, combine the mashed berries, water, sugar and cornstarch.
- Mix well; bring to a boil; stirring.
- Cook and stir for 2 minutes.
- Remove from heat, cool for 15 minutes; add remaining berries.
- Put in baked pie crust.

I kind of combined this recipe with another that was similar but this one had better instructions. I used 2 lbs of strawberries, 1/2 cup splenda & 1 1/2 cups of water and added 1 tbsp vanilla. I didn't mash all the berries I only mashed about 1/2 cup to add to the water & cornstarch solution. It came out really well. I even added red food coloring for some color. For my 2nd try at a Strawberry pie I am rather pleased with myself.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
