ingredients
- 15 ounces chickpeas
- 3 tablespoons tahini
- 1 egg
- 2 tablespoons lemon zest
- 1 1⁄2 teaspoons cumin
- 1 garlic clove
- 1 teaspoon lemon juice
- 1 teaspoon coriander
- 1⁄2 teaspoon chili powder
- 1⁄4 teaspoon salt
- 1⁄4 cup flour
- 2 tablespoons onions
- 1⁄2 teaspoon baking powder
- olive oil (for frying)
directions
- Pulse all ingredients in food processor until mostly smooth but still chunky.
- ( Mixture can be made ahead and refrigerated overnight ).
- Shape into patties and fry.

I am on a mission to find the best falafel recipe. This is my second attemt. I found it really wet to work with, so I added about another 1/4 c flour. Still wet, but I didn't want to take too much from the beans. My lemons were bad so I just ground up some more coriander seed since it imparts a nice lemony scent when freshly ground. I added a little more salt and a couple more garlic cloves. oh, and I added some parsley. I found refridgerating the balls before frying them keeps them from falling apart. I gave only four stars because of the wettness and they could be a wee bit spicier, IMHO. A good recipe, overall.
