Fabulous Sweet Potato Casserole

Delicious and similar to a famous restaurant's sweet potato casserole. Can be doubled, but only double the filling, not the crust.

ingredients
- 1⁄2 cup brown sugar
- 1⁄4 cup flour
- 1⁄2 cup chopped pecans
- 1⁄2 cup coconut
- 1⁄4 cup melted butter
- 3 cups cooked mashed sweet potatoes
- 1 cup sugar
- 1⁄2 teaspoon salt
- 1 teaspoon vanilla
- 2 eggs, well beaten
- 1⁄2 cup butter, melted
directions
- Combine brown sugar, flour, pecans, butter and coconut. Set aside .This is the crust.
- Combine mashed sweet potatoes, sugar, salt, vanilla, eggs and butter. Beat thoroughly.
- Pour into a greased baking dish.
- Bake at 350 degrees for 30 minutes. At this point dish can be covered and refrigerated.
- Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes.
- Allow to set at least 30 minutes before serving.
