Fabulous Frittata

- 2 large eggs
- salt
- fresh ground pepper
- 2 tablespoons grated cheese
- 2⁄3 cup vegetables
- 2 tablespoons fresh herbs (or 1/2 tsp dried)
directions
- Put the oven rack in the top 1/3 of the oven& preheat to 350 degrees.
- Beat the eggs lightly, (don't be cruel), mix the cheese and herbs in, and set aside.
- Spray a 8" non-stick, oven-proof frying pan with a little oil.
- Heat the pan on med-high heat.
- Add your vegetables to the pan.
- Stir the egg, cheese& herb mixture one last time, and pour over the filling.
- Stir lightly for about 30 seconds.
- Turn heat down to med-low.
- When the eggs begin to set on the bottom, use a spatula to loosen the edge of the frittata, and lift it slightly to let the unset eggs run underneath.
- Continue to cook until the egg is not-quite set, about 4 minutes.
- Put the pan in the oven, and cook another 4 minutes, until the top is set.
- Remove the frittata, loosen the edges& slide onto a plate.

I live in Canada, and I work in the restaurant industry (not a chef!). Don't have a favorite cookbook, but I love these internet sites, (especially this one, where you can get the dietary info - that's cool). I'm pretty passionate about animals, and about my health, (regardless of what my beer and cigarette habit might say about me!). The majority of food I like to eat is vegetarian, if not, vegan. I am able to enjoy a good steak every now and again, however. As long as I don't have to cook it. (I hate cooking meat - makes such a mess...) I have recently had a month off - I took the time to backpack around Mexico by myself. Crazy? Nah. Well, maybe...
