ingredients
- 2 cups quick oats
- 1 1⁄4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup shortening
- 1 cup natural peanut butter
- 1 cup sugar
- 1 cup brown sugar, packed
- 2 eggs
- 1 cup chocolate chips
directions
- Preheat oven to 350.
- Mix dry ingredients in a small bowl.
- In a large bowl, cream shortning and sugars on medium speed.
- Beat in the eggs and vanilla.
- Add flour mixture until well blended.
- Add chocolate chips.
- Drop rounded spoonfuls on a cookie sheet.
- Bake 11-13 minutes, or until golden.

These are great! I just finished making a batch for a potluck tonight and I'm eating one as I type this review. I agree with John; they are very moist. Just a couple of notes: I used 1 tsp. vanilla (the amount wasn't specified in the recipe) and I mixed the peanut butter in with the shortening and sugars (step #3).

I have found the ultimate biscuit recipe - I used 250g butter instead of shortening, added an extra 1/3 cup peanut butter as per comments made previously (used low fat crunchy), used 2 cups brown sugar and only used 1 cup oats. They made up so well and all of them got eaten before the end of the day!!
