Elvis Waffles
- Ready In:

- Yields:
-
4 waffles
ingredients
- 1 (7 ounce) package jiffy oatmeal muffin mix
- 1 egg
- 1⁄3 cup nonfat milk
- 2 bananas, sliced thin
- 2 tablespoons peanut butter
- 2 tablespoons honey
directions
- Warm up waffle iron ( can make pancakes if you wish to instead ).
- In medium bowl combine mix, egg, milk and bananas. Combine until well mixed.
- Spray the waffle iron with butter spray and a 1/2 cup measure. Using the measuring cup, ladle mixture onto warmed waffle iron and cook according to instruction to your waffle iron. Mine says until the steaming quits, but I find that is too long. The sugars in the bananas will , what I call, crystallize. Remove to platter and keep warm while you finish off the other waffles. I find that by 1/2 cup measures I get 4 good sized waffles.
- In 4 small bowls, divide the peanut butter and the honey. Warm this up right before serving in the microwave to make a Peanut Butter Syrup.
- Place still warm waffles on plate, pour syrup on top or serve on the side in their little bowls.

I Love to cook - and I am trying to find great recipes to help me stick to my diet - but also great recipes that let me do the cooking I enjoy.
I live in a cabin in Alaska with my husband, and our brown lab.
Husband enjoys skiing, fishing, and hunting, and I enjoy going along.
Mostly I enjoy trying out a great new recipe and adding it to our Favorites.
