  • In a saucepan, over medium heat, melt butter and mix in flour til smooth.
  • Gradually blend in milk, salt and pepper.
  • Cook, stirring until thickened.
  • Add cheese and stir until melted.
  • Gradually mix in chopped eggs and bacon.
  • Serve hot over biscuits, English muffins or plain toast.

  1. Very good, hearty breakfast. It was something different that plain old bacon and eggs or a breakfast sandwich. It was pretty easy too. as I used real bacon bits. If you used cooked sausage, it would kind of be like a biscuit and gravy breakfast. That is what I will try next time.
     
  2. This was a Christmas brunch item and it was delicious! The only changes I made were to saute some minced green onions and sliced mushrooms before adding the flour and milk. I also kept the bacon aside to add as desired (for the vegetarian in the bunch). Served over English muffins. Everyone ate and enjoyed this. For something so easy, it really brings on the flavor. Thanks!
     
  3. This is a quick, easy meal that tastes elegant. I halved the recipe and made it for 1 serving (myself, for a light supper). Served it on a split, toasted English muffin. My mother used to make a sauce for salmon loaf that was very much like this (without the bacon). Brought back memories. Made for TOP FAVORITES of 2009 COOKBOOKS TAG GAME.
     
  4. Oh yum, this was such a creamy rich, hearty & filling breakfast. I orig planned it for yesterday as DH was off work, but our plans changed & I found myself fixing it at 6 am this morning when short on time. That was no prob at all for this quick-fix. I crisped the bacon while I made coffee & had this put together almost b4 the coffee was ready. I served it w/a bagel half I cut in 4 pieces & I mounded the cheese/egg mix in the center & along the cut areas. A sprinkle of chives later, it was done & being enjoyed. DH is a breakfast hound & was happy today. Thx for sharing this sure to be repeated recipe w/us. :-)
     
  5. My 4 "girls" always ensure I have fresh free range eggs so am always looking for different ways to use them, this was like no recipe I'd seen before so decided to give it a try. I scaled it down to serve just one for my brekky on toast. This was nice & easy to prepare and tasted great, perfect for a cold morning in Autumn. Thanks for posting!

I am... ~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on! ~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for! ~a teacher who tends to reach for comfort foods to relieve stress. I am a middle school reading specialist. The miracles I see on a daily basis keeps me going! But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth. ~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!) ~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit.
