I tried it and this was great. I halfed the receipe since it's just me and my husband. I added garlic to the saute' of onion. The color wasn't super appealing but I tasted it and it was good. However, forgive the carnivour in me, but I just felt it was missing something - MEAT! so I added some ground beef that I made a couple days ago (it was a ground beef mixture of meat, tom. sauce, rotel tomatoes and seasonings) - I baked mine for about 25 mins and served over rice with a side of cucumbers and tomatoes with feta cheese on top. Excellent meal! Will definitely make again. Thanks for posting!!

This was pretty good. I was looking for something to do with eggplant besides adding spaghetti sauce. I cut this in half (there's only 2 of us). I added some fresh garlic and had some leftover turkey bacon so I added that too. The husband went for seconds so it must have passed the test. We'll be having this again. Thanks

I enjoy collecting cookbooks, normally ones that show how to cook from the basics, I use many different ones, but if I had to pick just one to get by with it would be Betty Crocker, hers would get anyone by and cooking on about anything. My pet peeves all seem to stem from cell phones, and text driving, some people should just hang up and get a life off the cell phone... :-)</p>
