DIRECTIONS

  • Chop hard boiled eggs into a large bowl.
  • Add the mayonnaise, pickle relish and chives (or onion).
  • Mix together.
  • Salt and pepper to taste.
  • Chill for 1 hour.
  • Serve on soft rolls or bread with lettuce as a sandwich.
