ingredients
- 1⁄2 cup quick oats, dry
- 1 cup water
- 2 ounces cheddar cheese
- 3 hard-boiled eggs, chopped
- 1 tablespoon mayonnaise
- mustard (optional)
- salt & pepper (optional)
directions
- Combine eggs, mayo and optional mustard in a large bowl. Set aside.
- Combine oats, water, cheese, and salt and pepper in a pot and cook for about 3 minutes or until oats are cooked and the cheese is melted.
- Combine everything together in the large bowl.
- Stir and serve.:).

I'm not sure what happened here, so I am not giving a star rating. I added the mustard and some collard greens (steamed as oatmeal cooked). Unfortunately I was just unable to eat this--I don't know what it was about it but I could only get one bite in. I made this for Best of 2010 tag so I know others have really enjoyed it, so I am concluding that I must just not have a taste for it. Thanks anyway for posting!
