Eat More Bars

"These are so easy to make and taste like a Eat More candy bar. I make them often and they are always on my Christmas dainty tray. Need to take a dainty to the office? This would be the one.I'm sure these could be made using a micowave, I have just always used the stove--- not sure why."

  • Melt peanut butter and honey over med low heat.
  • Add chocolate chips to peanut butter and honey.
  • Stir until melted.
  • Remove from heat.
  • Add vanilla.
  • Add oatmeal and peanuts.
  • Press into lightly buttered 8x8 pan( using lightly buttered hands if you need to).
  • Set in fridge until firm enough to cut into bars.
  • (about 1 hr).
  • (for thinner bars use larger pan).
  • Freeze very well.
  • ENJOY!

  1. These really do taste like fresh Eat More bars! The nuts I had were a little rancid so ended up using shelled unsalted raw sunflower seeds instead. Still close to an Eat More. Thanks!

  3. These are as good to look at as they are to eat. Super easy to make and delicious, the kind of bar that makes for a hit on the serving tray. I used the microwave to melt the ingredients and that worked well for me. Haven't had an Eat More bar but if that is what one tastes like - seems I have been missing out on a good thing!Thank you Dotty for another of your recipes that has been added to my favorites.
     
  4. Easy, Easy, Easy! Thease are tasty little morsels. I reserved some chopped peanuts and sprinkled them over the top for presentation. I used rolled oats (not sure if that whas ment by oatmeal and I'm unaware what a Eat More Bar is) right or wrong they were fab! Thanks for sharing :)

Tweaks

  1. Substituted shelled raw sunflower seeds for the peanuts & it still tasted very close to a fresh Eat More bar.
