Eat More Bars

ingredients
- 1⁄2 cup peanut butter
- 3⁄4 cup honey
- 1 cup chocolate chips
- 1 teaspoon vanilla
- 1 1⁄2 cups oatmeal
- 1 cup chopped peanuts (dry roasted are best)
directions
- Melt peanut butter and honey over med low heat.
- Add chocolate chips to peanut butter and honey.
- Stir until melted.
- Remove from heat.
- Add vanilla.
- Add oatmeal and peanuts.
- Press into lightly buttered 8x8 pan( using lightly buttered hands if you need to).
- Set in fridge until firm enough to cut into bars.
- (about 1 hr).
- (for thinner bars use larger pan).
- Freeze very well.
- ENJOY!

These are as good to look at as they are to eat. Super easy to make and delicious, the kind of bar that makes for a hit on the serving tray. I used the microwave to melt the ingredients and that worked well for me. Haven't had an Eat More bar but if that is what one tastes like - seems I have been missing out on a good thing!Thank you Dotty for another of your recipes that has been added to my favorites.

I have just recently retired. I worked in the banking industry for 25 yrs. My husband and I own a cottage and have spent most of this last summer at the lake. We go there in the winter as well. I love to cook and I collect recipes.
