Easy Tropical Beef Skillet

"Taken from a Pillsbury cookbook, serve this over rice. The recipe can be doubled and all ingredients can be adjusted to taste."

  • In a large skillet, toast the coconut over medium heat, until golden and crisp; set aside.
  • Brown ground beef and garlic in the same skillet; drain well.
  • Add salt, pepper lemon juice and soy sauce.
  • In a small bowl combine the cornstarch with reserved pineapple and mandarin orange liquids; stir well until smooth then add to ground beef and cook over medium heat for 5 mins, stirring constantly, until mixture is thickened.
  • Stir in the pineapple and mandarin oranges; cook 2-3 mins, or until thoroughly heated.
  • Serve over noodles or rice, and sprinkle with more toasted coconut and cashew nuts.

  2. I liked this recipe and my boyfriend has asked for it a couple of times. I'll take any excuse I can find to combine garlic, coconut, cashews, pineapple and mandarin oranges in one dish. Yum!
     
  3. This was so yummy! I used stewing beef instead of ground beef, and I didn't have the nuts. It's so nice to have something really different for beef! I think this would also be delicious made with chicken.
     
  4. Everyone liked this recipe. I served it over noodles next time we will try the rice. But I was in a hurry and did not want to wait the 20 minutes for the rice. So noodles it was. I'm keeping this recipe handy for those nights I need something fast so we can sit down and eat as a family.
