I felt it was silly to use only parts of a can, so I also used one whole can of corn, one can of refried beans, and one can of diced tomatoes. I really enjoyed the flavor. I've made this with ground chicken and ground beef; both worked very well. This would go very well on top of chips and lettuce, like a ready-made taco salad.

I gave this recipe 4 stars. My future hubby and I really enjoyed this recipe. My future hubby's and my only complaint was we would have liked the cheese mixed into the rice. It kinda reminded me of spainsh rice. My 7 yr old newphew didn't like this recipe, but he don't care much for casseroles. I made a few changes to the recipe. I used 1 whole can of corn, 1 can of refried beans, 1 can of diced tomatoes and little bit more salsa to use up these products. I wasn't quite sure if the corn was to be drained so I drained the corn and canned tomatoes. I also wasn't quite sure if the salsa was to be mixed in or placed on top of the rice so I mixed it in. Then topped the dish with cheese. Overall I'd make these again for sure as this was such a easy and quick dish. Thanks for posting such a good recipe! Christine (internetnut)
