I was looking for a pork chop recipe that was easy enough for a work night meal. This certainly fit the bill! Prep time was mere minutes. I did reduce the soy sauce as Freddym suggested, but think I would like to try to make a little on the "sweeter" side next time. I also took Freddym's suggestion and served the sauce over mashed potatoes. It was very good.

I'm a single mom of a soon to be 7 year old. I'm lucky that my son LOVES veggies - he'd rather have carrots than candy. I love to cook but don't get much of a chance to. So, when I do get to cook, I like experimenting. My friends often invite me over. They ask what I want to make - I give them a list of what I need and they buy all the ingredients and I do all the cooking. So, we all end up happy.
Personally, I like good down home cooking. I remember watching my grandmothers cook and what I would give to have some of those recipes now.
