- 4 ounces spinach flavored spaghetti
- 2 (12 ounce) bags frozen asian-style vegetables
- 1⁄3 cup creamy peanut butter
- 1⁄3 cup sesame-ginger salad dressing
- 1⁄4 cup fresh cilantro, chopped
- 1 orange, thinly sliced
directions
- Cook spaghetti, according to package directions.
- Rinse in cold water; drain.
- Prepare frozen vegetables according to package directions; keep warm.
- In bowl, combine peanut butter, sesame-ginger dressing and chopped cilantro. Stir in vegetables. Let cool.
- Arrange orange slices on a platter. Top with cooked spaghetti and vegetable mixture.

I substituted low-fat dressing, regular spaghetti, canned Mandarin oranges, and used one 16-ounce package of stir-fry veggies. The recipe was amazing! This will definitely have to become a standard in my household. I wish I had remembered to take a picture of it to share. Very good, thanks for posting!
