ingredients
- 7 cups sliced cucumbers (about 5 medium cucumbers)
- 1 cup sliced fresh sweet onion
- 1 green bell pepper, seeded and finely sliced
- 2 cups sugar
- 1 cup white vinegar
- 1 tablespoon salt
- 1 teaspoon celery seed
directions
- Combine cucumbers, onion and green pepper in a large bowl.
- Add the sugar, vinegar, salt and celery seed, mix well.
- Cover and refrigerate for at least 24 hours before serving.
- Pickles will keep for about 3 months in the refrigerator, covered.
- For a different taste, add either garlic, fresh or dried dill, oregano or hot pepper sauce with the celery seed.

I used zucchini, cukes, and squash. I planted way to much and needed something to preserve them. This was so easy and i love it! Although I didn't use any green pepper, or onion. I didn't have celery seed either, but i love dill so i used that! I just added some of these to tuna salad for my lunch. Thank You, Dancer for such a great easy recipe!

Cool and crispy! Just the way I like my pickles! And oh so tasty! YUM! I followed the recipe pretty closely, except, since I didn't have quite enough white vinegar, I used cider vinegar too. I also didn't have celery seed, but I did have celery salt...So I used some of that and reduced how much regular salt I used...I also threw in some mustard seeds. This recipe was great for the little cukes I picked up at a farmers' market! Quick, easy, and delicious! Thank you, Dancer for wonderful summertime recipe! ---Martha :)
