- 1 1⁄2 lbs lean ground beef
- 1⁄2 cup breadcrumbs
- 1⁄4 cup chopped parsley
- 1 egg
- 1 teaspoon salt
- 1⁄8 teaspoon ground black pepper
- 1 (8 ounce) can tomato sauce with onion
- 1 cup shredded sharp cheddar cheese
- 1⁄2 cup pickle relish
directions
- Preheat oven to 350°F.
- In a large bowl, combine beef, bread crumbs, parsley, egg, salt, pepper and 1/2 can of tomato sauce.
- Place half the meat mixture in a loaf pan. Cover with cheese and relish, then cover with the remaining meat mixture.
- Bake for 1 hour. Drain off accumulated fat. Turn loaf out into a shallow baking pan. Cover with remaining tomato sauce and bake 15 minutes longer.

This was excellent and quick! What I love is tat these are very common ingredients. Although my baby was distracting me, I messed up on the layering and ended up mixing the relish with the meat and topping it with the sauce right from the start rather than at the last 15 minutes. So, after and hour, I flippled the loaf into a shallow dish and topped it with more sauce...it was actually very good because the bottom ended up being very moist! It makes great sandwiches the next day. Thank you for sharing this recipe.
