I just made a single serving for myself using some leftover hash browns from breakfast yesterday. I used butter flavored cooking spray to cut down on the amount of butter and had to substitute sausage for the ham. It was fabulous! It's funny how half of it filled me up when I used the same amount of sausage, eggs, and hash browns that would be served separately in a regular breakfast for one person. This is a definitely a "do again" recipe. Thanks for sharing Kimberley!

I really like this recipe, and I'm not a fan of quiche. Its very easy and my family really enjoyed it. I used leftover ham, that I sliced and fried in a skillet to crisp it up before adding. This would also be good with made with cooked bacon instead of the ham. I didnt have swiss cheese, so I used a mozza & cheddar combo, it was great!
