  • Preheat oven to 350 degrees.
  • In a saucepan heat oil and saute the onion and spinach.
  • In a medium bowl combine the sauted onion and spinach with the remaining ingredients, including the scooped out stuff.
  • Stuff the filling back into the tomato halves.
  • Bake for 20-25 minutes.
