Easy Delicious Spanish Rice

ingredients

  • 2 cups instant rice
  • 2 cups water
  • 3 tablespoons taco seasoning
  • 1 (7 ounce) can rotel
  • 1 (6 ounce) can tomato sauce

directions

  • Boil water with the taco seasoning and tomato sauce. Add rice; cover and let sit 5 min, or till set.
  • Add Rotel (I don't boil Rotel, as it gets too hot).

  3. I used canned diced tomatoes with chiles instead of rotel and a can of sloppy joe sauce instead of regular tomato sauce. (It was what I had on hand) This was absolutely hands down the easiest and best tasting spanish rice I have ever made! I had 12 kids over for taco supper, and doubled the recipe as a side. Every last grain of rice was gone, and they were looking for more! Thank you for this recipe!!
     
  4. This was my first pick of the PAC 2007. I knew I'd like how quick this was, but I really loved the flavor! I made a taco seasoning (by Sugerpea) and it really had some flavor. The tomato sauce made it nice and hearty. We served it with fajitas and I just put my mixture on top of the rice (minus the tortilla) since it was so good. Thanks Ezbee, for posting a recipe I'm sure to make again. Roxygirl
