I've been sick this past week and this soup (made last night) is the first thing that has been really fully flavorful. Carrots are one of my fav veggies and the ginger, apple and cream cheese (95% fat free) turn them into show stoppers. It was simply perfect in flavor and texture. Being easy to make is a bonus. This is a keeper.

Definitely an easy soup to make, & the other ingredients worked wonders with the lowly carrot ~ Delicious, & I followed the recipe right on down, including the usual S&P & the chopped Honey Crisp apple! Well worth making & enjoying again! Thanks for sharing the recipe! [Tagged & made in Please Review My Recipe]
