Easy Corn Pudding (No Milk)

"I wanted to make corn pudding, but I ran out of milk. This is based off a dairy-free recipe. If you melt the butter in the casserole dish, you don't need to grease it. For a sweeter version switch the salt and pepper for pumpkin pie spice or cinnamon and sugar. For some spice add cayenne pepper"

  • 1 (8 1/2 ounce) package corn muffin mix (I use Jiffy)
  • 2 (14 3/4 ounce) cans sweet corn, drained
  • 2 eggs
  • 12 cup butter, melted
  • salt and pepper

  • Preheat oven to 350.
  • Mix all ingredients in 2 quart casserole.
  • Bake for 45 minutes Serve Warm.
