Crispy Coconut Pie
I received this recipe from a really good friend of mine. She is a Cancer Survivor and gave me this recipe to put into a cookbook that we printed to raise money for The American Cancer Society. It is really quick and easy and OOOOHHHHH SOOOOOOO GOOOOOOOOD!!!!!!
- Ready In:
- 3 eggs
- 1 pinch salt
- 1 teaspoon vanilla
- 1 cup sugar
- 1 cup coconut
- 1 tablespoon margarine
- 1⁄4 cup buttermilk
- 1 9 inch shallow unbaked pie shell
- 1 tablespoon flour (optional)
- Mix all ingredients well.
- Pour into pie shell.
- Bake@ 350 degrees F for 50 minutes or until golden brown and set.
- I use the flour to assure that the pie sets good, but it is not required.

If you're a coconut lover, this is absolutely wonderful! It was sooo easy to make. I followed the recipe exactly using unsweetened coconut and it was just perfect. I didn't think the pie was too shallow. It may be because I used extra large eggs. I wish I could have taken a picture of the whole pie because it really was picture perfect! Thanks Jellyqueen!
I was looking for a coconut pie recipe that would rival my boyfriend's aunt's and was pleased that this pie came together so easily! It really does make a shallow pie though, so I added an extra egg and increased the other ingredients accordingly. I added about 1/3c extra coconut, 1/2tsp more vanilla, 1/4tsp more butter, and just a splash of buttermilk. I also used wheat flour, and the original amount of sugar. The boyfriend AND his roommates loved it!
