Easy Chinese Egg Fried Rice

ingredients
- 1 tablespoon peanut oil
- 1 egg, beaten
- 2 cups cooked rice, cold
- 2 stalks green onions, chopped
- 1 teaspoon sesame oil
- 1 teaspoon salt
directions
- Heat oil in wok or pan.
- Add egg and scramble.
- Add rice and sauté until rice clumps are loosened.
- Add salt to taste.
- Sauté in green onion and sesame oil for fragrance.
- Serve immediately.

I have never thought of making fried rice for breakfast, but this was genius! Super easy, quick & delicious! I added some chopped up leftover ham with the rice and we all really enjoyed this dish. I made homemade fried rice once before years ago and it came out sticky and yucky. But this recipe is awesome and so simple. I used left over brown rice and used a little soy sauce instead of salt - so delicious. Thank you. And I also like that there's not too much stuff in it. And having it for breakfast is a fabulous idea. XOX
