Easy Bacon Swiss Chicken in a Slow Cooker

I winged this recipe off the top of my head one day. I was leaving the house and wanted to come home to dinner already done and just used what I happened to have in my fridge at the time. It was a wonderful dish! My husband devoured it and begged me to make it again - soon!

- 4 chicken breasts
- 4 slices bacon
- 4 slices swiss cheese
directions
- Place a slice of swiss cheese on each chicken breast.
- Wrap each breast with a slice of bacon.
- Place them inside your slow cooker and set on low for 6-8 hours.
- *No liquid is necessary as the chicken will produce enough on it's own to keep from burning.

This was a simple and quick, well to put together, nothing is quick in a crock pot. :) I did make a few changes, knowing that the cheese would melt off the chicken in the crock pot I waited and placed the cheese on it once it was cooked and on a warm plate. Melted just fine that way and really no extra work. I live alone so I only used 2 chicken thighs, not breasts, I don't eat the breast, but followed the recipes except for the thighs and putting the cheese on before serving. Could have used some seasoning besides the bacon, but was good, and I enjoyed it and have a thigh for tomorrow night, too. Thanks for posting. Made for Pac. 10-11Reply
