Drunken Hot Garlic Shrimp and Asparagus for One

"Springtime and asparagus – add shrimp, garlic, wine, and a good crusty bread – and Wow! This is one of my favorite springtime recipes, but wonderful anytime you can find good asparagus! The recipe will feed one very generously - add a few more shrimp and asparagus to feed two."

  • Cut the asparagus on a diagonal into 1-inch pieces and mince the garlic cloves.
  • Stir the lime juice into the wine and set aside.
  • Heat the olive oil in a nonstick frypan over medium heat.
  • Add the asparagus, garlic, salt, red pepper flakes and black pepper to the frypan and cook for two minutes stirring occasionally.
  • Add the shrimp and cook for three minutes stirring frequently.
  • Stir in the wine/juice mixture and bring to a boil.
  • Plate and serve immediately with a good crusty bread.
