DIRECTIONS

  • Rinse liver in cool water.
  • Fill a large pot with water and bring to a boil.
  • Add liver and garlic to boiling water.
  • Simmer for 1/2 to 3/4 hours until well done.
  • Allow liver to cool. (Discard garlic).
  • Cut liver into 1/2 inch cubes.
  • Spread on a foil lined cookie sheet.
  • Bake at 250 F for a minimum of 2 hours.
  • Liver is done when dry to touch and has shrunk to approximately 1/4 inch cubes.
