  • Saute parsley, onion, garlic and spices in hot oil for several minutes. Add the diced potatoes and cook on medium heat until they are almost tender.
  • Add the cooked fish to the mixture, and cook for 5 - 10 minutes, until the mixture is hot.
  • Pour beaten eggs over the fish mixture and let cook, then lightly stir.
  • Served with potato slices.
  • POTATO SLICES; Slice 8 red potatoes into 1/2 inch slices with the peel on. Add the potatoes, 3 whole garlic cloves, 1 tsp chilli pepper flakes, salt and cold water to a pot. Bring to a boil and cook until tender.
  • PREPARING DRY COD FISH; Cook for medium heat 20 minutes, then drain. Remove any skin or bones, then shred.
