Dill Sweet Potato Salad

- 2 large japanese sweet potatoes
- 1 large cucumber
- 5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
- 2⁄3 cup coconut vinegar (decrease amount if using white vinegar) or 2/3 cup other vinegar (decrease amount if using white vinegar)
- 1⁄4 cup chopped fresh dill (or more)
- salt and black pepper
directions
- Cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
- White they cool a bit, dice the cucumber and combine with the rest of the ingredients.
- Add in cooled sweet potatoes and stir well.
- Taste for salt and pepper and chill or serve room temperature.
