Dijon Potato Salad With Bacon

"I usually use red potatoes. This is a recipe everyone requests for potlucks."

ingredients

• 2 lbs potatoes
• 3⁄4 cup mayonnaise
• 2 tablespoons Dijon mustard
• 10 slices bacon, cooked and crumbled
• 1⁄3 cup scallion, chopped

directions

1. Cook the potatoes and cube while still warm.
2. In a large bowl mix together mayonnaise and Dijon mustard.
3. Add potatoes, bacon, and scallions to mayonnaise mixture.
4. Toss gently to coat well.
5. Refrigerate.
