ingredients
- 2 cups flour
- 2⁄3 cup brown sugar
- 1⁄3 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon ground ginger
- 1⁄2 cup butter
- 1⁄2 - 2⁄3 cup Libby's canned pumpkin
- 2 large eggs
- 1⁄3 cup buttermilk
directions
- In a large bowl combine all dry ingredients.
- In medium bowl combine all wet ingredients.
- Mix wet mixture with dry mixture.
- Preheat oven to 400 degrees.
- Grease 24 mini muffin cups.
- Scoop into the prepared muffin cups, fill about 3/4 full.
- Bake for 7-10 minutes, or until cooked in the middle.
