Delicious Asparagus Roll Ups

These roll-ups are simply delicious! they make a great finger food for parties and gatherings and are quite simple to prepare, if you are not a lover of blue cheese you may omit, you may also add in some finely crumbled bacon to the cream cheese mixture :)

  • Set oven to 400°F.
  • Grease a baking sheet.
  • Flatten bread with a rolling pin.
  • In a bowl combine the cream cheese with blue cheese, garlic and green onions.
  • Spread about 1 tablespoon of the cream cheese mixture on each slice of bread.
  • Top with asparagus spear then roll up tightly.
  • Place seam side down on a greased baking sheet.
  • Brush with butter and sprinkle with parmesan cheese.
  • Cut roll-ups in half.
  • Bake at 400°F for 10-12 minutes or until lightly browned.
  • Delicious!

    These were very very good, though I would not use the canned asparagus again as mine was mushy and hard to work with...I will use either blanched or frozen next time, but the taste and presentation was great!

    Another recipe that I was going to post - but Kitteen beat me to it. These are to die for!!!! Even people that are not huge fans of asparagus love these. I cut them per the recipe if serving as an appetizer -- but I've also served them with soup and leave them whole. These work well with whole wheat bread as well as white bread.

    Didn't think the cream cheese mixture spread terribly well with the bacon in it, so I think next time I'll spread the cream cheese with chives first and then just sprinkle the bacon on before rolling up. I used potato bread and thin asparagus as that's what I had, but I think I'll try to use thicker asparagus next time. Tasted good and was pretty easy to put together. Thanks.

    Asparagus is on sale here this time of year($.79/lb.), so I love recipes that use it up. I did use wheat bread- it was what I had- and they looked very festive- the brown and green together. Recipe works just as posted, but the variations are endless and I will try it with other cheeses and meats.
