Delicate Almond (Or Vanilla) Cookies

"These are simple and fast, yet soft and delicate cookies. Perfect to serve with afternoon coffee or tea. They orginally call for vanilla extract, but I like to make them with Almond extract. I also easily substitute soy milk for the cream."

  • Preheat oven to 400 degrees.
  • Cream butter and sugar thoroughly.
  • Add beaten eggs, cream and extract.
  • Sift dry ingredients and add to cream mixture, mixing well.
  • Roll dough into 1 inch balls and place on ungreased cookie sheet.
  • Bake 10 minutes.
