We liked these pork chops very much but felt quite a lot of the mustard ended up on the onions and kind of overpowed them. I was looking for a way to do potatoes and decided to add them to the onions, it worked out very well, except next time I will use less mustard, it was very strong on the onions and potato. The chops were very very tender. I will make them again.

These by far exceeded my expectations and were A1 fabulous. With honey mustard combinations, I sometimes worry that the final dish will be too sweet. Not at all the case here. I think the secret is enrobing the pork in the onions. Not only do they keep the meat moist and tender, they add a really nice flavor and of themselves are just wonderful. I could eat a plate of them alone. Thanks DiWriter!
