Dates Stuffed With Almonds and Blue Cheese

"Another in Boqueria's chef Sean Mullen's "tapas for 8" party menu. Substitute any blue cheese if you cannot get the one in the recipe, and any almond if you dont have marcona."

  • Cut each date along one side, removing the pit and replacing it with a toasted Marcona almond.
  • Place a teaspoon of the cheese inside the date and close it. Wrap each date with half a slice of bacon and secure it with a toothpick.
  • Bake in a 400-degree oven until golden brown, about 5 to 7 minutes.

  1. I used HUGE madjool dates and they are so rich that I could only eat one!!! I stuffed half the dates with cabrales blue cheese and 2 marcona almonds and then stuffed the other half with manchego cheese and 2 marcona almonds. I had some serrano ham left over in the fridge, so I used that in place of the bacon which was GRAND and lighted up the calories and fat. I actually preferred the ones with the huge chunks of manchego over the blue cheese, but now I know!!! Served with some Pinot Noir (which I just realized was French).   2. Wonderful and intense flavours. One daughter -- who does not care much for dates or blue cheese -- even enjoyed these. We used ordinary dates and almonds. I forgot these in the oven for an extra 5 minutes and that did them no harm. This would be a great make-ahead appetiser -- with the baking done at the last minute. Made and thoroughly enjoyed for Pick A Chef.

  4. I've ALWAYS shied away from blue cheese, but using it the way this recipe calls for, I could happily eat these tasty little morsels & NOT see the stuff, so that was a definite plus! I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
