RASPBERRY PUDDING
- 1 cup water
- 1 tablespoon cornstarch
- 1⁄4 cup water
- 1 (3 1/2 ounce) box raspberry gelatin powder
- 3 cups fresh raspberries
- 1⁄2 cup granulated sugar
- 1⁄8 teaspoon salt
- 1⁄4 teaspoon lemon juice

VANILLA FILLING
- 1⁄2 cup cornstarch
- 1⁄8 teaspoon salt
- 3 egg yolks
- 3 cups milk, scalded
- 1 1⁄3 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 cup milk
directions
- for the RASPBERRY PUDDING.
- heat the water and sugar.
- Mix the cornstarch, salt, water and lemon.
- Add to water, sugar, mixture.
- Boil until mixture is clear.
- Add gelatin and stir to dissolve.
- Add raspberries and cool.
- for the VANILLA FILLING.
- place 3 cups of milk in pan.
- Heat to scalding.
- Mix cornstarch, sugar, salt, vanilla extract, egg yolks, and 1 cup of milk.
- Slowly blend into hot milk, stirring constantly until thick.
- Cool.
- Pour 2 cups of vanilla filling into each pie shell.
- Place 2 cups of Raspberry Pudding on top of Vanilla filling.
- Top with whipped cream.

This is one of our top 10 favorite pies! I got this exact recipe from someone else, and I'm glad to see it here so I don't lose it. My friends and I find it especially useful for using wild berries we've picked, as it makes them go further. (It's sad to see hours of picking all go into one pie) And any kind of berry works with this: blackberries, mulberries, strawberries... You do have to be careful with the vanilla custard part. If you try to rush things, you will get lumps.

I am very fortunate to have eaten at Das Essenhaus on several occasions. It is about an hours drive to go there, but I wouldn't hesitate (and often did) go for just a piece of this pie. This pie has a layer of whpped cream on top the entire pie (not just a dalop on it) I used recipe #72356. This pie is both my moms and my favorite pie when we go and I made this for her to surprise her. I also took one of the pies to work and shared, and everyone that tasted it asked for the recipe. Thank you so much for this recipe, and I know I will be using it many times to come.
