Dan's Lemon, Onion and Garlic Chicken

  • Melt butter and add the olive oil, lemon juice, rosemary, garlic salt, salt & pepper.
  • Take chicken breasts & marinate in mixture.
  • Place in the refrigerator for a minimum of 30 minutes.
  • Remove chicken from refrigerator.
  • Preheat BBQ.
  • Leave chicken at room temperature for 15 minutes.
  • Place each piece of chicken on separate piece of aluminum foil.
  • Cut lemon into 8 slices.
  • Place 2 lemon slices, 1/4 of the onions and 1/4 of the garlic under each chicken breast and then place 2 lemon slices, 1/4 of the onions and 1/4 of the garlic on top of each chicken breast.
  • Wrap the foil securely around each piece of chicken.
  • Place foiled chicken on grill and BBQ on hot coals for 8 minutes. Flip over and BBQ the other side for 8 minutes.
  • Ready to serve.

  1. Very good. I changed it to 6 servings. I left out the butter as I am on a diet. DH doesn't like rosemary so I used thyme. Used fresh garlic no garlic salt. Not sure how to crush an onion so I sliced one thin and placed it just on the bottom of the packet. I also baked in a 375F oven for about 1hour, no flipping. It was very good and I am sure I'll make it again. I served with fresh steamed green beans and Creamy Potato Salad With Lemon and Fresh Herbs Recipe #235089 It was a very good meal although next time I think I'll serve it over some sort of pasta or grain and used the juice for flavoring. Thanks for posting.

  3. This was easy and so delicious! I didn't read all of the directions properly but this still turned out well for me. I did not make time to marinate the chicken, but rather combined all the ingredients (except the lemon) and slathered it on the chicken before placing the chicken breasts on the lemon slices in the foil packets. I was surprised at how tender and flavourful the chicken was even without the marinade. These cooked to perfection in the time spcicified and we really enjoyed this recipe, thanks for posting it.
     
  4. I let this marinate a teensy bit longer then 30 minutes (like 3 days!). This has excellent flavor but like toni I had very bitter moments because of the peel. And there was so much liquid when I opened the packet that I had to mop my plate. If you let it marinate as long as I did then I would recommend reducing the amount of lemon slices a bit because the lemon flavor did get a bit overwhelming. I served it over bulgur (#33722) which I highly recommend. The chicken and bulgur combo was top knotch.
     
  5. I made this lower in fat by omitting the butter from the marinade and using boneless skinless breasts. The results were really good -- and I don't think suffered for the omission. More poached than grilled, the chicken is moist and tender. The final result is a nice lemony chicken with subtle hints of rosemary. I did notice a small amount of bitterness from mthe peel and would suggest peeling the lemon before slicing for use in the packs. Thanks Dizzy.
