What an amusing but fun way to make use of some pickle juice that would otherwise go down the drain. At first I was a little worried that this would be too sweet but it was balanced and tangy. I found that the veggies were a little raw after 5 minutes so I simmered for an additional 4 minutes, the onions and peppers were cooked but still crispy. A great topping for my turkey burger.
