Danish Curry Noodles

ingredients
- 500 g penne pasta, this is a little over a lb
- 5 carrots, diced
- 3 tablespoons butter
- 2 zucchini, diced
- 1 onion, diced
- 1 cup peas
- 1 teaspoon salt
- 1 teaspoon pepper
- 4 teaspoons curry powder
- 200 ml cream, 3/4 cup
directions
- Boil penne noodles al dente.
- Saute diced carrots in butter;.
- add onion
- cook until just soft
- add zucchini; add peas.
- cook until just done
- Add salt, pepper, and curry powder.
- Add cream; add noodles.
- cook a coupla minutes
- stirring and shaking.

I liked the combination of penne and curry. It was pretty bland, as I guess befits Danish curry. I liked that it was flavorful without being hot. We had to add more salt, and DH added some chili. I also wish the veggie pasta ratio had been higher on the veggie side. I substituted evaporated milk for cream. This is the first time in a long time that I have used butter to saute with. It kept the veggies nice and moist.Reply
