  • Mix fruit and orange juice and soak overnight.
  • Next day add 2 cups self raising flour.
  • Put in tin and bake for 1 or 2 hrs at 140-150°C.
  • (Scrumptious) (Use skewer to test finish time. When skewer comes out clean cake is done).

    I’ve made this countless times, and it always turns out well. I frequently substitute apple or pineapple juice for the orange, and it works extremely well with gram flour and a tsp of baking powder as a gluten free version.

    I made mine with 1 kg fruit mix, 3 cups tea, soaked over night. Then add 3 cups s/r flour Cook for 2 and a half hours on 125c 26 cm tin I found the fruit juice too sweet. Very nice

    Great recipe. I added some mixed spice and rum to the orange juice when soaking the fruit. Next time I will try it with GF flour.
