- 2 tablespoons vegetable oil
- 1⁄2 onion
- 1 tablespoon curry powder
- 1 tablespoon cumin
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 minced garlic cloves
- 1 teaspoon ginger
- 2 tablespoons ketchup
- 1 cup red lentil, washed
- 4 cups water
directions
- On medium-high heat, sauté onions in oil until soft (about 4 minutes).
- Add everything except the lentils and water. Cook out bitterness of dried spices for 1-2 minutes.
- Add lentils and water.
- Simmer on medium heat for 25 minutes, stirring occasionally.
- Enjoy with rice or on its' own.
