- 1 cup brown rice
- 2 cups chicken broth
- 1 teaspoon curry powder
- 1 onion, chopped
- 2 garlic cloves, chopped
- 8 ounces firm tofu
- 15 ounces pink beans
- 15 ounces whole kernel corn
- 15 ounces diced tomatoes
directions
- Prepare rice with broth and curry separately. Saute onion, garlic until soft.
- add remaining ingredients, add rice. Serve.
