Cucumber-Pimento Salad

"This recipe came from my mother-in law's neighbor, Chuck. We were visiting her in Wisconsin and Chuck brought this over one afternoon for us to enjoy with our dinner. It was so good that after dinner I knocked on his door and asked for the recipe -- which he was kind enough to share. My family calls this "The Pickle" because it reminds us of homemade bread and butter pickles, only better. :) Cooking time is actually cooling time in the fridge."

Kippy2 this was out of this world! It reminded me of my mom's bread and butter pickles...only a lot better. I followed this recipe exactly except for cutting it in half. My DH said make this again anytime! (went back to get another bite after dinner and he had eaten it all). Thank you for a *delicious* recipe! Made for Spring PAC 09.

I am so pleased to be the first to review this recipe. This was a delightful dish, perfect as a side to just about anything - very versatile! My family of four polished it off in one night, YUM! I didn't have pimentos, so I finely chopped a sweet bell pepper (orange) instead. This reminded me of the cucumber salad you often find in oriental restaruants. THANKS Kippy!!

It's a pleasure to cook for my friends and family! I love to try new recipes and I prefer eating and entertaining at home to eating at a restaurant. Cooking is a passion and I am having fun! ;) I am a school secretary, very happily married to a firefighter who is the love of my life! I am the fortunate soul of an outstanding mother in law, who I consider my "mom", and for a step-dad in law that is an absolute riot and always makes me laugh. My own dad is a wonderful person, a fantastic woodworker and generous man whom I adore. I am very human rights focused and very open minded. It takes all races, creeds and sexualities to make this world go 'round. Close your mind and close the door on life, I say. Or to quote a song "Free your mind, and the rest will follow." Yeah!! Be that leader!!! I am also the mom to 2 wonderful girls (ages 20 and 18) and to 2 spoiled rotten Labrador Retrievers and an equally spoiled cat. I am an animal lover and love to provide "good care and lots of affection" to all pets, not just my own! Here are my wonderful doggies: I am adopted and I just turned fabulous 41! I stay very busy, but like to watch Food Network and to try new recipes. I have also become a Zaar Addict. Youngest Daughter calls it my "Cooking Facebook" LOL!! For me, there is nothing better than getting together with good friends and sharing good times and great food! I leave a rating or a review for every recipe I try from the Zaar site. Thank you for sharing your recipes with me. :)
