  • Combine potatoes, cucumber, onion & chives in a large bowl.
  • Blend mayonnaise,yogurt,vinegar,mustard,salt and pepper in a small bowl.
  • Pour over potato mixture and blend thoroughly.
  • Refrigerate several hours.
  • Sprinkle with paprika before serving.

  3. Nice change from my normal potato salad. Loved the hint of the basil. I did use fresh, as I thought 1 tbsp. dried would have been just a bit too much. Delicious. :)
     
  4. A NICE QUICK side dish here. I used plain yogurt, but other than that recipe was made as listed. Excellent flavors and taste. Made for 1-2-3 hit wonders.
     
  5. This is a very good potato salad. I used green onions instead of onion. And did only half the recipe for me. I used reduced-fat mayonnaise, fat-free plain yogurt. Thanks BakinBaby. Made for 123 hit wonders
