Cucumber-Olive Appetizers

"If you wanted to go the extra step peel, finely chop or coarsely grate half a cucumber, hand squeeze out all the moisture then add in some to the cream cheese mixture --- these are easy to make and delicious, for some heat add in a pinch of cayenne pepper if desired --- if you are serving a large group of people I suggest to double the recipe, the bread slices may be lightly toasted if desired ---serving is only estimated."

  • 1 large cucumber (unpeeled, skin washed)
  • 0.5 (8 ounce) cream cheese, softened
  • 14 cup bleu cheese salad dressing (or to taste)
  • 1 small garlic clove, finely minced (may omit if desired)
  • 1 loaf sliced rye cocktail bread (1-pound loaf, can use dark pumpernickle)
  • sliced pimento-stuffed green olives (use as many slices as needed)

  • Slice the unpeeled cucumber into 1/4-inch slices/rounds.
  • In a small bowl combine the cream cheese with blue cheese salad dressing and garlic powder.
  • Spread onto each slice of cocktail bread.
  • Top with a slice of cucumber and an olive slice.
  • If desired but it is not necessary you may place one colored toothpick through the olive and down into the bread.
  • Place onto serving platter/s.
