- 1 large cucumber, diced
- 1 teaspoon minced garlic
- 1 medium jalapeno pepper, finely chopped
- 3 green onions, sliced
- 2 tablespoons fresh cilantro
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon lime zest, grated
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground black pepper
directions
- In a large bowl, combine cucumber, garlic, jalapeno pepper, green onions, cilantro, olive oil, lime zest and pepper. Refrigerate for 2 hours before serving.
