Cucumber and Red Onion Salad

  • Cut onion slices into quarters.
  • Toss cucumber slices and onion together in a medium bowl.
  • Stir sour cream, vinegar, salt and pepper into cucumber mixture until well blended.
  • Let stand 5 minutes.
  • Divide salad greens among four salad plates.
  • Stir cucumber and onions again.
  • Top each plate of greens with 1/4 of the cucumber mixture.

  1. Refreshing salad that looks great too. The dressing is just right. I served this with cold sliced chiken and crusty rolls -Easy to prepare and do use the mixed salad greens mine had 5 different types of lettuce including radiccio and Watercress
     
  2. I love creamy recipes such as these but not the heavy handed use of the cream-whether it's mayo or sour cream in this case. A lovely fresh cucumber was picked from the community garden for this salad recipe and the mixture spooned over a bed of baby spinach, arugula and baby kale. The salad was served with our main of egg noodles with caraway and carrots w/cardamom and nutmeg for a splendid Scandinavian supper. Made for CQ 2017.
     
  3. I love this recipe. I'm a huge fan of cucs and onions in a sour cream vinegar sauce to begin with. I liked the red onion tweak AND the idea of making a smaller amount that will stretch by using a bed of lettuce. Brilliant! We really enjoyed this side dish and it would be great on a Smorgasbord spread!
     
  4. There have been quite a few cucumber salads we have enjoyed but I think this one is about the best. I did double all the ingredients except the onion and used a bag of chopped romaine lettuce. Served with horseradish meatloaf #434823 by breezermom and corn on the cob. I will definitely be making this again! Made and reviewed for the Culinary Quest 2017 - Scandinavian.
     
  5. Great salad! Being very fond of those lovely tasting English cucumbers,red onions and mixed baby greens this was right on for us. Used a mix of both the sour cream and yogurt - other then adding a touch more of both I made as posted. Great with chicken and a loaf of freshly baked bread. Our kind of salad!
