DIRECTIONS

  • In saucepan, cover wheatberries with 2" water, add salt. Gently simmer uncovered for up to one hour. Strain out remaining water.
  • Whisk together ricotta and honey until smooth. Combine with wheatberries and (optional) raisins.
  • Sprinkle each serving with desired topping: cinnamon and candied orange peel, shaved chocolate, or simply chocolate chips.
