Crusty Parmesan Herb Zucchini Bites

- 4 medium zucchini, sliced in half
- 1⁄2 cup parmesan cheese, freshly grated
- 1⁄2 tablespoon fresh rosemary, minced
- 1⁄2 tablespoon fresh thyme, minced
- 1 teaspoon olive oil
- 1 pinch salt
- 1 dash pepper
directions
- Pre-heat oven to 350 degrees. Lightly brush both sides of the zucchini with olive oil and place on a foil-lined baking sheet.
- Mix cheese and herbs together in a small bowl and sprinkle over the zucchini. Season with salt and pepper, to taste.
- Bake for 15 minutes and place under the broiler for the last 3-5 minutes, until cheese is crispy and browned.

I am a Pennsylvania country girl, transplanted to the Maryland Metro area since 1988. I have always loved cooking and trying new recipes. I recently found out I am gluten and dairy sensitive, and have been put on a very restricted diet. At first, this was crushing! But . . .
